Let's Get to Know Each Other

Hello There! My name is Rebekah and I'm a 28 year old Mom of three from Tampa, Florida. I am on a journey to better overall health with the help of keto. I started this site as a way for me to archive all of the things I've learned and am still learning along the way, and to hopefully help others achieve their weight loss goals with a ketogenic diet.

I started my weight loss journey in 2015. I was tipping the scales at 265 lbs, the heaviest I've ever been in my life, after several long months of dealing with depression, anxiety, and turning to binge eating for relief. I lost about 40 lbs by cleaning up my diet, starting to exercise, and just generally being more active. Fast forward to Spring of 2016 and, surprise! I found out I was expecting my third baby! I have battled with thyroid disease, polycystic ovarian syndrome, and hashimotos thyroiditis, so my fertility odds have always been low. However, God saw fit to bless my husband and I with another sweet baby and we were thrilled. So, understandably, my weight loss journey hit "pause." I still tried to eat a healthy, balanced diet, and went to the gym about four or five times a week while pregnant. This kept my weight gain in check, but I still weighed in at 245 lbs the day of delivery in November. My third delivery was very traumatic and upsetting, as I had a severe cervical hemorrhage minutes after delivery which required emergency surgery. During surgery, which I was awake for, I suffered a severe panic attack. With my postpartum recovery period starting off on such a rough foot, I was not in great shape mentally or emotionally. For over a year after my daughter was born, I was in a mental and emotional rut, not really able to help myself move forward in my life at all. My health and fitness goals fell to the back burner.

At the beginning of 2018, fed up with the funk that I was in and feeling absolutely miserable for continuing to carry this extra weight around, I decided it was time for a change. So I decided to join weight watchers and start following a low fat diet. Well, this did NOT work for me, and I actually GAINED four pounds! NOT the way I wanted to start the year! I did a lot of thinking about what had worked for me in the past. I thought back on the periods of my fitness journey when I was successful with consistently losing weight and remembered that what worked best for me was Keto. I refreshed my memory on how to follow a keto diet, went and bought a bunch of cheese and meat, and started on February 1st. In two months since, I have lost 23 lbs and am down to my lowest weight in five years.

I have spent a lot of time getting to know the ins and outs of a ketogenic diet. I have done it the right way and the wrong way. I have tried every other diet on the market (I'm not kidding, I have literally done EVERYTHING out there) and there is not a single way of eating that works for me like keto. I have earned two diplomas in Personal and Sports nutrition I am confident that keto can work for you too.

If any of this sounds familiar and you're tired of trying lots of diets that don't work and remaining frustrated, then follow along with me on my ketogenic journey and let's do it together. If you have any questions, feel free to reach out to me at: ketorebekah@gmail.com :)

Recipe: Cheesecake Fruit Dip

Happy Memorial Day! Later today we are going over to my parent's house for a family dinner and yesterday I was perusing the Aldi for something fun to bring along with us. They had some great looking keto-friendly-fruit (berries) for super cheap (which, let's be honest, that's why we love Aldi!). So I grabbed a bunch (all for under $5) and decided to come up with a fruit dip that would compliment it. I used to create a fruit dip that was [delicious, but] chock full of sugar that was cream cheese, cool whip and sweetened condensed milk. Every once and a while, I would try to reign in the sugar by buying "light" or sugar free cool whip, but still, the sweetened condensed milk accounted for everyone's carbs for the day (or week). Anyway, it was one of my favorite things to make for a party, and I wanted to come up with a keto friendly alternative. On instagram somewhere, a friend posted a recipe for keto condensed milk, and I'll try that one day, b...

"The Fat Woosh" Theory

So, you may or may not have heard this theory before, but it's one of those "I wish I'd known about that earlier" things that I recently started to understand. When you are on a weight loss journey, you sometimes will experience stalls or periods of unexplained plateaus. You're doing everything right, but you're not losing weight. It can get super frustrating, but there may be a scientific reason why it's happening. I've touched on this a little bit before, but today I wanted to explain it in a little better detail to provide some clarity, and hopefully, some encouragement if you've found yourself in a weight loss stall.  So, I've talked before about how your body puts in a lot of work to keep us healthy and thriving. Sometimes, if you change your eating habits suddenly, or are losing weight too quickly, your body will work to slow down the process, in case this might indicate that you are starving or in crisis. We know that we're not...

Recipe: Keto Brownie Cupcakes

So, based off the fact that I'm posting not one, but TWO "sweet" recipes for y'all today, you can probably figure out that I've got quite a sweet tooth. A couple weeks ago, I randomly felt like experimenting in the baking department and seeing if I could create a cakey-keto-brownie that I actually liked. I tried a ruled.me recipe for a chocolate mug cake a few weeks back it was GROSS. Like, throw away after the first bite, gross. Note, I've never made brownies from scratch before, but for some reason (probably to avenge the failed mug cake experiment), I thought it was something I could try. And they turned out really great! I made a small batch for my husband and I one evening and we had them warm with a scoop of vanilla halo top. Delicious! Unfortunately, I have no low quality pictures of the cooking process for you all, but you'll just have to use your imaginations. 😉 Lastly; every time I post a baking recipe, I get asked if it's OK to swa...
