Recipe: Fathead Soft Pretzels

One of my favorite carby foods is a big, salty, soft pretzel. When I was pregnant with my youngest, it was my number one craving and one of the only things I could hold down in my first trimester (woohoo, morning sickness!). When I did weight watchers, I used to make the recipe for "two ingredient dough" almost constantly in order to make it into soft pretzels with cheese or "everything but the bagel" seasoning from Trader Joe's. Unfortunately, weight watchers was not a program that worked for me, and when I decided to kick my carb habit and return to Keto, I assumed I had to say goodbye to soft pretzels forever. BUT... the other day, the thought occurred to me, why couldn't I make a "fathead-esque" dough, and make it into pretzels instead of pizza crust? This way I could have my pretzels and eat them too. 😏



Ingredients for Fathead Soft Pretzels:
- 1 Cup of Shredded Mozzarella
- 2 Ounces Cream Cheese
- 3/4 Cup Almond Flour
- Pinch of salt
- Pinch of garlic powder
Everything But The Bagel Seasoning
(makes three 2-pretzel servings)

Preheat your oven to 400 degrees.

In a microwavable bowl, combine your cream cheese and mozzarella. Put in the microwave for thirty second increments until your cheeses are melted together, and no longer "stringy" (this took a total of 90 seconds in my microwave). When these are melted and thoroughly mixed together, add in your almond flour and seasonings (to taste).


This should actually resemble the consistency of pizza dough.
Break this dough apart into six (basically) equal sections, and roll into a ball with your hands.


When you have your small dough balls, start to roll them out into a long linear shape.


 I did this partially between my two hands and partially by rolling it onto my cutting board. Whatever works. Then, you will shape those into pretzels on a cookie sheet covered with parchment paper (you do not want to use foil or a bare pan, this dough will stick to it and the texture won't be right).


 (isn't it cute!) OK... Now you will spray the tops of your pretzels with cooking spray. I used the olive oil cooking spray I had on hand, but any type will work, as it's main purpose is to make the toppings "stick." You could also brush them with olive oil or melted butter, whatever floats your boat.

After you have sprayed your pretzels, add your bagel seasoning. This is my favorite way to do it, but you could also just top them with basic salt, or another seasoning mix you like.


How cute are they! Now, bake at 400 degrees for about 10-12 minutes, until the tops are toasty golden brown.

They are really delicious and the texture is great! You could get creative and make this same recipe with any toppings you like.
