Recipe: Keto Chocolate Chip Cookies

So, I've had a rough couple of days hormonally... the kind of days when you are crampy and bloated and feel like you could eat a small country, you get my drift. I have been wanting dessert something AWFUL so today I decided to do some experimenting in the kitchen and create these Keto Chocolate Chip Cookies. They are sugar, gluten, and grain free. I had about a half a bag of Lily's Chocolate Chips in my pantry, plus some uneaten Lily's Milk Chocolate Bar. I used both for this recipe! The two different chocolates add a nice flavor contrast! You can find the Lily's chocolate chips at Whole Foods, or you can order them here! (They're a bit cheaper at Whole Foods).



Recipe for Keto Chocolate Chip Cookies:
1 1/2 Cups Almond Flour
1/2 Cup Salted Butter (softened)
3/4 Cup Erithritol Sweetener
1 TSP Vanilla Extract
1 Egg
1/2 tsp baking powder
1/4 tsp salt
3/4 Cup Sugar Free Dark Chocolate Chips
1/2 One Lily's Chocolate Bar (optional)

Bake at 350 Degrees for 12 Minutes

The second Lily's Chocolate is not mandatory, but I think it's tasty. I used a Salted Almond & Milk bar, but you could add whatever flavor you liked, some of the more interesting flavors might taste good too! Also, you can use another brand of sugar free chocolate chips if you like, but I used Lily's.


- Combine all of your dry ingredients
- Separately, beat your sweetener in with your egg, and add the butter and vanilla, mix. 
- Mix the wet ingredient mixture into the dry ingredients
- Fold in the chocolate chips


Mix until thoroughly combined, then scoop out into small balls on wax paper on a baking sheet.



I made mine small so it made about 20 small cookies.

Bake for 12 minutes at 350 degrees.


And... you're done! Let them cool and enjoy!
The texture is a little soft and biscuity thanks to the almond flour, but they are really good!



This is a great base recipe that you could add extra add-ins too. Some ideas are nuts, sugar free candies, sugar free peanut butter, etc.

The macros for this can be found on My Fitness Pal using the title "Keto Coach Chocolate Chip Cookies" and the macros represent the calories, fat, carbs and protein PER cookie. If you decide to make them bigger and make less cookies, you'll just have to change the portion.
